What is it that makes hedgies want to cover themselves in spit? I remember reading somewhere that hedgehogs do not actually emit a smell. Their poop and stuff smells but they themselves do not have a scent. Is this true? If it is true, then are hedgies trying to put the smell of whatever they licked onto themselves? Like perfume?

I tend to think that they anoint because they are spreading a new smell in their environment onto themselves as a form of scent based camoflage.

The perfume thing was my thought too. Especially because they often seem to anoint with food. Maybe it's like a mating thing "hey come mate with me, can you smell all the good food I've found?!" ;)
