So how exactly can I do this without getting bitten or pinched? Lol. Her nails are getting kinda long.

A good way to do it is while they're in a bath. They can't ball up then. That's how I clip Lily's and, although she struggles a bit to get away, she doesn't bite me, and doesn't freak out too horribly about it. I managed to get her back feet both done tonight, along with a couple of nails on a front foot.
Another suggestion is to double-team her, have someone try distracting her with treats while you clip. For hedgehogs that really like to annoint over things, you can offer a leather glove or something to annoint over.
