He spits at you?

How often do you get to take him out? I would suggest you take him out every night, for at least thirty minutes.
If there was an all of a sudden change I would worry about a health issue, or consider quilling.

Some hedgehogs are just always a bit shy, and never want to be cuddled, it's just part of their personality. Don't let this discourage you; take your baby out every night, with some dim lighting and let him hide under a blanket while you watch tv or do something else quitely and let him slowly get used to you.
