Every hedgehog is different with their own personality just like people but his personality will come out more the longer he's with you and gets used to you. It's important to handle him and have cuddle time every day to bond with him and prevent him becoming antisocial

As for not eating, it's probably just upset from moving and being in a new environment. My girl barely ate for the first few days after I got her (I soften her biscuits for her which she likes, makes it easier to eat.)
Closely monitor the eating and maybe soften the biscuits and try offering them with your hand or letting him see you put it down in front of him. Hope this helps.
Then why is he sleeping uncurled on his stomach a lot because it doesn't seem normal.

That may be just how he likes to sleep. They also change position while sleeping, just like we do.

My girl sleeps in some weird positions too, sometimes she's curled up, sometimes she's laying flat and other times she sleeps directly on top of her favourite toy.

Unless you hedgehog was in pain or unresponsive, it would be best to leave him to sleep but keep an eye on him without disturbing him.

Hope this helps.

They're not awake the full night, they do nap

My girl likes to eat at night then have a snooze then get up again.

As long as they're eating and drinking and running, they are ok to nap at night

For some reason to he likes t have his food spread around his pen instead of in a bowl.😕

That's totally fine, it's called forage feeding
Baby hedgehogs sleep ALOT. Day and night. Mine wakes up and has his morning jog. I bring him in his bugs and we hang out and then he’ll run for a couple hours and then go have a nap somewhere usually in his sandbox lol
He does this off and on all night long till sun starts to come up. Some days he sleeps more then others.

they like to hunt and find food so feeding around the cage sounds fun for him!

That’s called splatting, if she’s laying against something like plastic or anything colder she might be overheating. If not it’s just a position she likes.
