I make sure they ALWAYS have fresh kibble with them in their homes all the time. I feed my hogs about 1/2 cup of kibble (I usually count the kibble to monitor their appetite) and again, it is with them at all times. Then every morning when I go in for their cage cleaning, I dumped out the day-old kibble and give them fresh kibble. :)

Babies eat a lot. Quillbert now eats half the amount of food he used to eat as a baby. Just free feed them a few days until you learn how much they generally eat. Then you can give them what they eat and a little extra.

Mine are eating 2 T of kibble, its available at all times.

I give Lily fresh food each night. I always give her more than she'll eat in one night, so she gets 70 kibble every night. She generally eats anywhere from 30-50, depending on the night, and what other treats she gets. She doesn't usually come out of her igloo during the day to get a snack, but I know other people have hedgehogs that do, so she still has some food in her bowl in case she ever does.
