Is he warm enough? Do you have a heating set up for his cage? What kind of kibble does he have? Make sure he's getting 12-14 hours of light during the day, but that there's no light around his cage at night. Some hedgehogs are very picky about how dark it has to be at night for them to come out. He needs to eat his food soon though, not just treats. Try scattering some kibble under his blanket with him to encourage him to eat. Tonight, make sure he's warm enough, and that it's dark enough and leave him be. Try counting how much kibble is in his bowl before you go to bed & write it down. In the morning count again, as well as checking for any left under his blanket. If he's not eating, you may have to syringe-feed him, but he may eat if he doesn't have to come out.
