When I look at my hedges nails when they need to be trimmed theres a a clear part on the end, a not clear/yellowish part in the middle, and the pink part. Do I cut only the clear bit off? Or also the yellowish part? It looks like its skin or something under the nail or is it just dirty?

You can clip up to the yellow part, including a bit of it, especially if it's long. The part you definitely don't want to clip is the pink part, or too close to it. That's the quick, and if you nick that by accident, it'll start bleeding. This may very well happen at some point, and that's why it's a good idea to have a bowl of cornstarch or flour nearby when you're clipping nails. Dip the bleeding nail into the flour/cornstarch and it'll help it clot and stop bleeding.
