Default Behavior questions for a new hedgie

Sorry in advance for the long post!! I just got my first hedgehog a week ago, and she is 9months old and named Rosie. I've done my research, so I'm somewhat comfortable with how things are going: Rosie already recognizes me and is comfortable being held and eating from my hand. But I do have a few questions I'd appreciate any input on:

1. Rosie loves to wiggle through my couch cushions, under my scarf (which I put in her cage so she can familiarize with my scent), through her bedding. She hasn't shown any interest in toys or her wheel, so I'm trying to figure out: is she just a burrower, or is she just scared/adjusting? Should I be handling her more (I handle her about 30min-1hr every day)?

2. With Rosie, I wake her up around 8pm and cuddle with her, and after a little while she poops on me. Ideally, I try to wake her up in her cage so that she can get her bearings and do her business, but she always just goes back to sleep unless I hold her. She doesn't wake up on her own until very late at night when I'm asleep, so my question is: can I potty train her in some way? (I know litter training is an option, but how?)

3. I tried to trim her nails last night (a couple of them were getting quite long already). I woke her up around 11pm, and soaked her feet in warm water, wrapped her in a towel, and attempted to trim. She was visibly uncomfortable, which I expected, but she began to poop and pee a lot because I think she got scared. I tried to cuddle with her in a towel, but she continued to pee and squirm. I then put her back in her cage so she could feel safe again, but I'm wondering if I should give her space today? Or should I just play with her as a I normally would? I just don't want to stress the poor baby out.

When we have Daisy out she likes to find a place to burrow and go back to sleep. She runs on her wheel late at night and hides if anyone turns on a light to see. I'd hold her like you normally would. I only get to trim a nail here or there. Oh and Daisy still poops on me if she's not burrowed in her bag sleeping.
