I know that their quills are generally sharper as babies, but do their teeth ever get any duller? (Something like puppy teeth perhaps?) Got bit for the first time today, (silly me, just ate a banana and didn't wash my hands after...

I'm sure they dull a little bit with all of the chomping on hard kibble. Norman's teeth used to feel like little daggers when he'd give me the occasional chomp as a baby. They don't seem to be as pointy/sharp any more as he's about 1 1/2 years old. So his teeth have either dulled a bit, or I've become more accustom to the occasional "mistaking your finger for a meal worm!" chomp.

They absolutely can and do wear down. Because hedgehog teeth do not continually grow like a rodent's once worn down they are gone. We have seen many senior hedgehogs that need soft food because their teeth have been worn down to nubs.
You don't want them to dull down. Those sharp bites are good since it means they still have a very healthy set of teeth. Just don't get your finger between them and their mealies!
