I agree that the light schedule could be related. Regardless of when exactly the light goes on and off, hedgehogs, like humans and other animals, have a sort of "biological clock". This is especially going to be true since you just got him, and I assume he was on a more normal light schedule before you brought him home. If his internal clock is telling him to go back to sleep around 6am or so, for example, but the light being on prevents him from coming out until 2am, that light schedule is really limiting the amount of "awake" time he has. So, changing the light schedule is a good idea. Computer lights will sometimes bother them, but a dim computer light isn't as bad as having the whole room lit. If it seems to be a problem, you could move the cage to a different room.

How much food do you put in the bowl every day? They should be free fed, which really means having a little more available than they tend to actually eat. Adults eat 1-2 tablespoons and babies will generally eat 2 or more.

I'm definitely going to change his lighting, and see if the computer light bothers him. If it is, I can see about moving him. Trying to find the best option for him!

I free feed him at the moment. Right now, there are exactly 70 pieces in there though, which I will check against in the morning

Heh, you'll notice all the quirks the longer you have him. (stalker pet-parent syndrome)
When I kept mine in my room, I would cover parts of his cage(that was facing me or the computer) with a bedsheet, to block off excess light. He wasn't bothered by whatever leftover light there was, and he'd still come out, while I was on the computer.

Try offering him some kibble now to see if he'll eat while you're holding him. Then make note of how much he ate in the morning.

I've changed his lighting and he seems much better now! The computer doesn't bother him, I don't think - he wheels a lot with it on!

Seems like he was just being silly. He eats now, and I hear him drinking <3 Thank you all~

I'm glad he has settled in! It can be a weird adjustment for both hedgehog and human and sometimes you just have to work out the kinks. But it sounds like you guys are off to a great start.
